It's grilling season! Here's a recipe for one of our recent favorites: grilled sweet potatoes. This is something I just decided to try one day on a whim. I figured, sweet potatoes are good, and I love grilled foods—why not grill sweet potatoes?
Grilling is a great way to cook them quickly, and in a healthy way (if that's something you care about). You just toss some sliced sweet potatoes with some olive oil and whatever herbs and spices you want and they come out deliciously every time. I normally go with salt, pepper, thyme, and rosemary, but you could definitely add some garlic powder or spice it up with some cayenne chili powder.
Grilled Sweet Potatoes
Makes: 2-4 servings
Prep time: 10 minutes
Cook time: 10 to 15 minutes
2 sweet potatoes, peeled and sliced into ½-inch thick rounds
Olive oil
1-2 sprigs of thyme, stems removed
1-2 sprigs of rosemary, stems removed and leaves chopped
Freshly ground sea salt and black pepper
1. Set grill to highest setting, and allow to preheat for 5 to 10 minutes.
2. Place sweet potatoes and seasonings in a large mixing bowl, pour in a splash (1-2 Tbsp) of olive oil, and toss until everything is uniformly coated.
3. Grease the grill with olive oil by pouring some on a sponge or towel (I use a paper towel), then rubbing the grates. Don't let your fingers get too close. Place the sweet potato rounds on the grill, one at a time.
NOTE: Be careful when you're adding the rounds to the grill so they don't fall through the grates.
4. Cook on first side for 2 to 3 minutes, then flip and lower to medium-low heat. After 5 minutes, flip again. Continue cooking until they're soft and can easily be broken in half.
