Herb-Roasted Baby Potatoes

Nobody wants to spend all of their time cooking a side dish when there are more important parts of the meal to work on. These herb-roasted potatoes can be paired with almost any protein and are simple enough to make on any night of the week. Don't worry, though—we'll certainly have plenty of other potato recipes coming in the future for those nights when simple just won't do.

Depending on how much time you want to spend prepping these, you can always skip the fresh herbs in lieu of dried. In that case, use about half of the amounts listed below. 

Herb-Roasted Baby Potatoes

Makes: 4 servings
Prep time: 10 minutes
Cook time: 35 mintues

1 ½ lbs baby potatoes, split lengthwise
1 Tbsp extra virgin olive oil
2 tsp garlic powder
1 Tbsp fresh thyme
1 Tbsp fresh oregano
1 Tbsp fresh rosemary
Coarsely ground sea salt
Coarsely ground black pepper

1. Preheat the oven to 375°F.

2. Put the potatoes in a large mixing bowl. Top with oil, garlic powder, and herbs, then season with salt and pepper. Toss to coat.

3. Roast on a medium baking sheet for 35 minutes, flipping when they are halfway done.
